Shrimp Stuffed Shells

Ok.
So, I guess I was really in the mood to cook yesterday, but that leaves me with another FANTASTIC recipe for y'all.

I really could use some type of 'flashy' name for this, but I don't have one.

But, hey...when you taste THIS good...you just don't need a name!

My kids even tried the broccoli! (The don't *do* broccoli...ever).


Shrimp, Broccoli, and Mushroom Stuffed Shells in a Basil Alfredo Sauce.

Mmmm....

Here's what you need...

About 3/4 a box of large shells, cooked and drained.
1 - 1 1/2 pounds of thawed, cooked shrimp...take the tails off.
4 oz. mushrooms
Broccoli - I didn't measure...probably about a cup or so.

The Sauce
1 Stick of Butter (Real Butter - Come on, make Paula Deen proud!)
1 Pint of Heavy Cream (I didn't say this was a 'diet' recipe)
1 1/2 cups parmesan cheese
1 tablespoon garlic powder
1 tablespoon basil
1/2 teaspoon oregano
1/4 - 1/2 teaspoon white pepper

Instructions:
Well, it's pretty easy.
Throw all the sauce ingredients in a pan and simmer until it tastes like heaven.  It will.
(Probably about 5-10 minutes.)
Throw in the shrimp, mushrooms, and broccoli.
Simmer for, oh, say 2 more minutes.

Now, shove all that goodness into those shells!!
Don't be shy!
Pour remaining sauce over the top...just for good measure.
Top with some parsley.

Now, if you want to be all fancy smancy you could sprinkle some mozzarella or parm cheese on top and stick it under the broiler until browned and bubbly, but this is really not needed.

Sans broiling, it's quick, easy...and yummy.
A treat night dinner in week night time!!
