Black Bean Nachos

Had a long past few days and feel as if you have to pry yourself off the couch?
Does the thought of making dinner (or lunch) make you want to pull the covers over your head and take a nap?
Or have you just had a typical day of chaffeuring the kids around, or taking care of small sicklys, or taking the not-so-demon dog to the vet?

You know what...
It really doesn't matter, because I've got a recipe that is great anytime!

And it only takes minutes to prepare.
Yes...minutes!


These are fabulous...and super easy!

Ingredients:
Tortilla Chips
Can of Black Beans (rinsed and drained)
Shredded Cheddar Cheese
Cilantro and Diced Onion

I didn't really measure anything, they are just THAT easy!
Chips go in the bottom, I think it was about half a bag.
I tossed the beans on...the whole can.
Then the cheese...about two BIG handfuls.
Then some leftover cilantro and onions from taco night.
Popped them in the oven (450F) for about 5-10 minutes.
And, poof...lunch was served!

You could top this with sour cream if you wished.
I didn't, well, mainly because I can't stand the stuff.

And here's the BEST part...these are delicious!
In fact, after I made the nice little pretty picture above, I walked back over to the stove and shoveled a heap more nachos onto my plate.
